The French have an expression something like “’esprit d’escalier” which is the dumber than dumb feeling you get when you walk onto the stairs and you realise what you should have said.

In normal life you just have to accept that you can’t always say that stunning line at the right time every time, but for interviews you should be able to find the right words more often.
